Brunch Bunch

Crepe-stuffing goodies...stawberries, bananas and Nutella. Yum!

I don’t know about you, but one of my favorite ways to spend a Sunday morning is chowing down on some awesome food with a fabulous group of ladies. That’s exactly how I spent the better half of today, and it was absolute perfection. Since I brought my camera and took a few shots of the brunch bunch, I figured I’d share them. Besides my friend Kate was like, “What do you even do with all the photos you take?” To which I replied, “They go on my blog, duh!”

At any rate, we did it up potluck style and I made an egg casserole that one of my friends has made before and is always a crowd favorite. I didn’t take any photos of it because, well, pictures of eggs can look pretty unappetizing. At least, the ones I took did. Still, I wanted to share the recipe with you because it is super simple and freaking delicious! Seriously. Here you go:

Ingredients:
12 eggs
1/2 c. flour
2 c. cottage cheese
1/2 tsp. salt
2 c. jack cheese
1/4 c. butter
2 4oz. cans of green chillies

What to do:
Preheat oven to 350 degrees. Mix all the ingredients together in a large bowl. Pour into baking dish and cook for 25-45 minutes. Try to eat just one piece!

  2. mmm, I love brunch! we make a similar egg recipe but without the cottage cheese. I’ll have to try yours sometime! We call it mexican eggs and serve it with sour cream and salsa.
